Dough material:
Seed powder: high flour 90g, dry yeast 1/2t, water 90g.
Main dough: high flour 2 10g, brown sugar powder 45g, salt 1/4t, water 105g (the water quantity is for reference only and needs to be adjusted according to the water intake of flour, and the actual water consumption for kneading this time is 90g), and corn oil 15g.
Apple stuffing: apple 1 piece, brown sugar 1 spoon, a little vegetable oil, cinnamon powder 1/4t.
working methods
1. Seed powder fermentation: put the seed powder raw materials into the pot and stir evenly, and cover with plastic wrap to ferment the seed powder for about 100 minutes until the dough is fermented to 2-3 times its original size.
2. When the seed surface is fermented, you can make apple stuffing: peel, core and dice the apple. Heat a pan, pour in some vegetable oil, add apples and brown sugar and stir-fry until dry. Finally, add cinnamon powder and mix well.
3. Dough making:
1) After the seed dough is fermented, add the dry materials in the main dough to the seed dough and stir it slightly.
2) Add clear water and corn oil, knead into smooth dough, spread the dough by hand until the dough can be pulled out into a slightly transparent film, then knead it into a round shape and put it into a container for basic fermentation.
3) The dough is fermented to 2.5 to 3 times its original size, and the flour is dipped with your fingers, then the dough is inserted and pulled out. The hole will not immediately return to its original state, and the fermentation is basically completed.
4) Ventilate the fermented dough, roll it into strips, and add apple stuffing in the middle.
5) Roll the dough into strips and pull up the noodles to tie a knot.
6) Then connect the two ends of the noodles, put them face down into an 8-inch cake mold that has been pre-oiled, and finally ferment for 50 minutes.
4. Preheat the oven and bake at190 C for 20 minutes. Because it takes a long time to bake, the bread needs to be covered with tin foil after coloring.
