Brief introduction of Wenzhou glutinous rice

"Wenzhou glutinous rice" is a special breakfast in Wenzhou, and it is also the first choice for all Wenzhou people and foreigners in Wenzhou. Very delicious.

Glutinous rice is made of steamed glutinous rice sprinkled with minced fritters or pieces of fritters and minced meat soup. Some people also like to eat sweets, that is, change the minced meat soup into sugar.

Generally, glutinous rice is served with egg soup, soybean milk, tofu and milk. General process of production

1. Soak fresh glutinous rice in water for about three hours, and steam it in a steamer covered with gauze.

Note: the soaking time of glutinous rice from different producing areas is different, so it is better to soak it until it can be crushed directly with your fingers.

When the time is tight, you can directly cook glutinous rice in a rice cooker (pressure cooker) without waiting for soaking time, but after all, there is no fragrant glutinous rice.

2. The traditional broth is chopped with three layers of meat (pork belly), chopped mushrooms, and then put into a pressure cooker with water, with wine and salt, monosodium glutamate, ginger and fennel, and cooked.

3. The fritters should be re-soaked, that is, the fritters should be soaked twice. Some people want onions and shrimp, others don't, and they have to be put at the end.
