Nankang New Year's Customs

First, before the year

In Nankang, near the time of the Spring Festival, the people who go out, even if they are far away (some of them are working or studying abroad) try to rush back home to have a reunion with their families for the New Year.

After the winter, every family began to wax sausage (half-fat, half-lean pork, cut into pieces, plus salt, pepper, dashi, star anise, etc., add the right amount of white wine, mix well and leave it for one night. Take pork sausage, salted, cleaned, put the meat in, pressed, with a needle to poke the place where there are bubbles to let off the air. Sausage wrapped, hung up with bamboo poles, put into the sun, this is the Gannan people wax sausage tradition), in addition to the production of plate duck.

Steaming glutinous rice wine (Gannan people commonly known as "water wine", brewing glutinous rice wine process is roughly like this: the first glutinous rice with rice steam, and then spread it to be cold, and then scattered on a certain amount of wine cake, it is loaded into a small tank, and then in the tank surface and around the straw and quilts and so on, covered tightly to keep warm. After a few days, the glutinous rice in the jar fermented into dregs and was permeated with a lot of liquid. At this time, a small basket made of bamboo and gabion was put into the tank to allow the liquid to enter the "liquor," and then the liquid was scooped into the wine jar with a bowl. This liquid is called "jujuniang," and the degree of jujuniang is so high that it must be infiltrated with a certain amount of boiling water. This is brewed into a mellow Hakka glutinous rice wine)

Fried 馃zi from mid-December of the lunar calendar, do sugar pops, fried peanuts, melon seeds, yellow yuan rice 馃馃zizizi(It is a unique food of the Hakka people of Gannan, with a long history, as early as the Ming Dynasty, the Zhengde years have been classified as a tribute. Glutinous rice is used as the raw material. Playing Huang Yuan Mi馃 is an important folklore activity of Gannan Hakka, in which a number of young and strong men with red cloths tied around their waists and holding Huang Yuan sticks made of wooden sticks take turns to play Huang Yuan Mi馃 around the stone mortar, with the old people and women busy in the outer circle, and the children watching the fun from the sidelines. When this one is finished, the group carries the stone mortar to the next one and goes from house to house. Freshly beaten yellow Yuanmidu馃, hand grasped into a ball dipped in soy sauce or sugar, can be eaten. When visiting friends and relatives, a few pieces of golden yellow yellow Yuanmidu馃 are presented, meaning good luck and prosperity. Guests at home, the yellow yuan rice馃 cut into strips, fried and steamed are suitable, the flavor is very good)

Late December, people open the New Year's goods, go to the store to buy the items needed for New Year's Eve and food.
