On March 3rd in Changsha, why do you want to eat boiled eggs?

The custom of "cooking eggs with rapeseed" on March 3rd is said to have started with the story of Hua Tuo treating an old man in the Three Kingdoms.

According to legend, one day, Hua Tuo came to Mianyang, Hubei Province to collect herbs. Because of the rain, he came to an old man's house to take shelter from the rain. When he saw that the old man was dizzy, headache and miserable, he immediately diagnosed the old man and collected a handful of vegetable seeds in the garden of the old man nearby. He asked the old man to boil eggs with juice. The old man ate three eggs as instructed, and he recovered. When Hua Tuo treated the elderly, it happened to be the third day of March.

After the story spread, it became a custom in Mianyang and then prevailed in Jianghan Plain. In addition, the third day of March in the summer calendar, commonly known as "Shangsi Day", is a traditional festival of the Han nationality, so it gradually became a household name and was passed down from generation to generation.

Raw materials include fresh cauliflower with roots, some of which also include maple bulbs (Passepartout), soybeans or ginger and red dates. After they are cooked together with the eggs, they are taken out and shelled, then boiled in clean shelled eggs, and the soup is poured out and eaten with eggs, or red dates and soybeans.
