What is sensory evaluation?

Sensory evaluation is a scientific method to arouse, measure, analyze and explain the sensory characteristics of products through vision, smell, touch, taste and hearing. Generally speaking, it is a scientific and objective method to draw conclusions and evaluate the color, aroma, shape, quality and taste of food with the help of human eyes, nose, mouth, hands and ears, combined with psychology, physiology, physics, chemistry and statistics.

Sensory attributes: product characteristics perceived only by sensory organs, including appearance, flavor, organizational state, etc.

Arouse: refers to the preparation and treatment of samples under certain control conditions to minimize bias factors. In sensory evaluation, a set of standard operating procedures and precautions should be established for different products.

Measurement: By collecting data, establish a reasonable and concrete relationship between product characteristics and human perception.

Analysis: that is, analyzing data. Different evaluators produce different evaluation result data. In order to evaluate whether the relationship between product performance and sensory response is true, it is necessary to analyze the data with statistics.

Interpretation: According to the data, analysis and experimental results, make reasonable judgments, put forward reasonable measures, and put forward practical solutions in combination with specific experimental purposes to guide practice.

Because of the different purposes of analysis, sensory analysis can be divided into two categories: analytical sexy official test and preference sexy official test.

Analysis and sensory evaluation: using human sensory organs as measuring and analyzing instruments to determine the quality characteristics of articles or identify the differences between articles. It is called type I or type A sensory evaluation. The appraiser's objective evaluation of commodities is not interfered by people's subjective will.

Preference sensory evaluation: using objects as tools to measure people's sensory characteristics. Also known as type II or type B sensory evaluation. This evaluation depends on people's comprehensive physiological and psychological feelings, which is completely a subjective behavior.
