What kind of food does kung pao chicken belong to?

Kung pao chicken is a Sichuan dish.

Kung pao chicken, with spicy litchi flavor, is a famous Sichuan dish that originated in Guizhou and spread to Shandong. Guizhou, Shandong and Sichuan have different approaches to this dish and different names. Guizhou is called Chili fried chicken, Shandong is called sauce chicken, and Sichuan is named after kung pao chicken.

The origin of kung pao chicken:

According to legend, kung pao chicken was invented by Ding Baozhen, acting governor of Sichuan during Guangxu period of Qing Dynasty, and was cooked by a chef when entertaining guests. Ding Baozhen is called "Ding Gong Bao" because he is the prince of the East Palace, and this dish is also called "kung pao chicken".

After kung pao chicken was introduced into North China and Northeast China, local people would add cucumbers or carrots to adjust their original spicy taste, but it is precisely because of the moisture of vegetables that the color and flavor of dishes are completely different.
