The cast iron pot should be boiled before it is used for the first time. The steps of this ceremony are as follows:

1. Carefully scrub the whole pot with detergent and hot water. The detergent can't be used any more.

2. Wipe the whole pot dry and heat it to dry the water (it can be dried directly in the sun in summer);

3. After heating the pot with low fire, coat lard or vegetable oil on the inner wall of the whole pot, and then let it stand;

4. Wash the inner wall of the pot with hot water and soft cloth or wipe the inner wall of the pot with napkin, and repeat 3;

5. After repeating it for 2-3 times, take some cheap green leafy vegetables (I use vegetable skin leaves) and fry them in the normal way to see if there are any problems. Basically, by this time, they have slipped away like non-stick pans. After frying, throw it away.

6. Wash the inner wall with warm water and soft cloth, dry the water, and then wipe a little vegetable oil on the whole inner wall.

In addition, the heating of thick cast iron pots is much slower. When cooking, you can put your palm on the bottom of the pot to feel the heat before cooking with oil. Cast iron pots are not good at cooking, so it is a good choice to fry them or bake them in the oven.

Pots made of other materials, such as stainless steel, are beautiful but not recommended, and it is easy to stick to the pot because of poor heat conduction. High-grade copper pots are easy to rust and scratch, which is very troublesome to maintain. There are not many pots made of pure aluminum now, because they are easy to burn and toxic.

What should I do if the cast iron pan rusts due to improper use and maintenance?

1 In light cases, rub 2 with coarse salt, rub 3 with vinegar, wash with rice, soak in sodium hydroxide (strong alkali) for a few days in heavy cases, then take it out and wash it carefully with water, and wipe it repeatedly with steel balls. After applying vegetable oil, put it in a preheated oven and bake it for one hour (it is said that there are ovens with good functions that have the function of "cleaning" and can remove rust). Then take it out and coat it with a thin layer of vegetable oil.
