I have been a pastry chef for 20 years and taught you how to make dough correctly. Prepare a cup/bowl, add 3g sugar (sugar-assisted fermentation) to 250ml warm water, add 5g yeast, stir well, pour it into 500g flour several times, and knead the flour into smooth dough. Cover with plastic wrap and ferment for three hours (three hours in winter and 1 hour in summer), and you must put it in the refrigerator overnight. If you want to speed up the fermentation, you can also burn a pot of warm water of about 70 degrees and put the dough container on the warm water. Flour is fermented to twice its size. Friction exhaust on the chopping board. Divide into similar doses. Roll it into a steamed bun skin with a rolling pin (if it is as thin as a key, the bottom of the steamed bun will be worn out).
Chop meat, it is best to chop it with a sense of granularity, and don't be afraid of fat. Steamed buns are only fragrant with fat meat, which is the secret of whole soup steamed buns. Add cold boiled water to the meat several times (mainly) and stir clockwise (in one direction) until the cold boiled water is absorbed by the meat stuffing. This kind of meat stuffing tastes thick but not firewood, and it tastes great!
