What kinds of tofu are there? What are their characteristics?

The types of tofu are mainly divided into southern tofu, northern tofu, lactone tofu products and various vegetarian products made from them.

(1) South tofu is a tofu product made of gypsum as coagulant, which has good water retention and is smooth and tender.

(2) Beidoufu refers to tofu products made of brine (mainly magnesium chloride) as coagulant. The finished bean has strong fragrance, low water content and better texture than southern tofu.

(3) Lactone tofu is a tofu product made of gluconolactone as coagulant. The prepared tofu has high elasticity and smooth and refreshing texture. Products are usually boxed.
