What is the difference between freeze-dried coffee and instant coffee?

Different production methods: Freeze-dried coffee is ground out of the liquid coffee through the role of freezing, sublimation, the removal of water, to get a high content of caffeine in the coffee raw materials, the removal of water is also more pure, and will not take away the excess material;

The traditional production process of instant coffee, will reduce the quality of the original coffee, through the High-temperature steam extraction, after high-temperature water, the aroma in the coffee will overflow with the steam, and the high temperature will also destroy the structure of nutrients in the coffee, so the traditional instant coffee is not as good as lyophilized coffee in terms of taste and nutrition, and lyophilized coffee can be regarded as an upgraded version of traditional instant coffee.

Notes on instant coffee

Because of the strong thermal sensitivity of the aromatic substances in coffee, it is very easy to evaporate at higher drying temperatures (a certain amount of volatilization has already taken place during the extraction and concentration process), and therefore, the aroma of instant coffee is not as strong as that of fried ground coffee.

Manufacturers will take the practice of adding food flavorings in order to make up for the aroma of the coffee. Therefore, you must not overdose on instant coffee, otherwise, you will also consume a lot of flavorings at the same time.
