What is the difference between "liquid fermentation" and "solid fermentation" of vinegar?
1, liquid fermentation refers to the fermentation method in which the material state is liquid in the acetic acid fermentation stage.
2. Solid-state fermentation is a way of microbial fermentation on a solid substrate with little or no free water.
Second, the output rate is different.
1, short fermentation time, high yield and high production efficiency.
2. Long solid-state fermentation time, many kinds of microorganisms, many kinds of fermentation products, mainly alcohols and nonvolatile acids, high esterification and better taste.
Compared with liquid fermentation, solid fermentation has the following advantages:
1, low water activity, high water insolubility of substrate, easy growth of microorganism, high enzyme activity and rich enzyme system;
2, the fermentation process is extensive, and strict aseptic conditions are not needed;
3. The equipment has simple structure, low investment, low energy consumption and easy operation;
4. The post-treatment is simple, with little pollution and almost no wastewater discharge.
