There are three types of leavening agents used to make noodles: baking soda, flour fertilizer (old noodles), and dry yeast. They all work pretty much the same, but active dry yeast (yeast powder) is best. Yeast flour is a natural yeast extract that is rich in vitamins and minerals and is protective of the vitamins in the flour. Yeast also increases the B vitamins in the dough as it multiplies. Therefore, the finished pasta made with its fermentation is several times more nutritious than unfermented pasta such as cakes and noodles.

Baking powder is a natural substance, so using too much of it will not cause bad results, but will only increase the speed of fermentation, and perhaps add more nutrients as well. The approximate dosage ratio: 500g of flour with about 5g of dry yeast powder is about right.

First, activate the yeast: put a proper amount of yeast powder into a container, add about 30 degrees of warm water (about half of the total amount of water used to make the dough, not too little. If you want to save time, the whole amount of water is not a problem.) Stir it until it melts, let it sit for 3-5 minutes, then pour the yeast solution into the flour and stir well.

The best environment for fermentation is between 30-35 degrees Celsius, preferably not more than 40 degrees Celsius, and between 70-75% humidity. A method that is common to all seasons: put hot water around 60-70 degrees Celsius into a large steamer pot, put the dough bowl into the pot (the bowl should not be in contact with the hot water), cover the lid of the steamer pot, and then place the dough bowl into the pot at the same time as the steamer.
