What is a simple way to make traditional Thai food?

For "Pad Thai", soak the rice noodles in a large bowl filled with hot water for 20 minutes. Mix together the fish sauce, lemon juice, sugar, oyster sauce, 10 ml of the chili sauce and chicken stock in a small bowl. Set aside to serve. Preheat a large skillet or wok over high heat and add the vegetable oil. When the oil is hot, add the garlic and sauté for about 10 seconds. Add shrimp and chicken and sauté, stirring constantly, until shrimp are opaque and chicken is cooked through, about 5 to 7 minutes. Push the food to the sides of the pan, leaving the center of the pan empty, then pour in the eggs to the center. Fry, then stir and scramble until eggs are set. Add the rice vermicelli noodles to the wok and stir-fry well. Pour in the seasoned fish sauce, oyster sauce and soy sauce, stirring constantly until the rice vermicelli noodles are tender. Add a little water, if needed, to thoroughly cook the rice vermicelli. Add 200g bean sprouts and green onions and stir-fry well. Remove the pan from the heat easily and sprinkle with chopped peanut kernels. Taste and adjust the amount of seasoning and spices to taste. Spoon out onto a plate and garnish with fresh coriander leaves, the remaining 135g bean sprouts and the lemon wedge pieces. Serve immediately.
