What is emulsification and what are the typical emulsifiers?
1. Emulsification is the process of dispersing one liquid into a second immiscible liquid. The largest kind of emulsifier is soap, washing powder and other compounds, and its basic structure is alkane chain with polar groups at the end. In human body, bile can emulsify fat and form smaller fat particles.
2. Due to the action of surfactant, the phenomenon that two liquids which are originally immiscible with each other can be mixed together is called emulsifying phenomenon and emulsifier.
3. Typical emulsifiers are usually common in food, cosmetics and pharmaceutical industries.
