In the north of China, there is a saying that "winter solstice jiaozi, summer solstice noodles". Why eat jiaozi on this day? Jiaozi's original name was Joule. People eat jiaozi in the winter of solstice to commemorate Zhang Zhongjing, the "medical saint".
It is a holiday custom to eat jiaozi on the solstice in winter. According to legend, at the end of the Eastern Han Dynasty, Zhang Zhongjing saw many poor people hungry and cold on his way home, and his ears were frostbitten. So he sent medicine to the poor to cure the injury. This medicine is called "Quhan Joule Decoction". Its practice is to put mutton, pepper and some cold-dispelling medicinal materials into a pot and cook them, then take them out and chop them up, make them into ear-shaped Joules with dough bags, put them into a pot and cook them and distribute them to beggars. Everyone has two charming ears and a bowl of soup. After eating Quhan decoction, people feel feverish all over, their qi and blood are smooth, and their ears are warm. After eating it for a while, the patient's rotten ears healed.
People eat "Joule" and drink "Quhan Decoction", and they are all hot and their ears are hot. After about half a month, people's frostbitten ears recovered. In memory of this "medical sage" who gave up medicine to heal the wounded and rescue the dying, every winter solstice, ordinary people imitate "Joule" and make "Joule" or "flat food" from flour, which is now jiaozi. Later, there was a saying that eating jiaozi on the winter solstice would not freeze your ears. So every winter solstice, people eat jiaozi anyway.
Zhang Zhongjing didn't give up taking medicine until New Year's Eve. On the first day of the new year, people celebrate the new year and the recovery of rotten ears. The food they make is like burnt ears, which are called "Jiao Er" and "jiaozi". Since then, the story of "Quhan Joule Decoction" has been widely circulated among the people. On the solstice of winter and the first day of New Year's Day, people eat jiaozi, and they still remember Zhang Zhongjing's kindness in their hearts. Therefore, there is a saying that eating jiaozi on the solstice in winter won't freeze your ears.
