The king of Shanxi pastry: the origin of Taigu cake
According to legend, Taigu cake was invented in Xianfeng period of Qing Dynasty, when the commerce, handicraft industry and financial industry in Taigu area were extremely prosperous. On the basis of ancestral craftsmanship, the old master of a biscuit shop carefully concocted the present Taikoo cake formula. Taikoo cake is beautifully made and has exquisite craftsmanship. The finished product is full of color, flavor and aftertaste, comparable to Beijing cake and Cantonese cake.
The selection of Taikoo cakes is very particular. It uses high-quality flour, sugar, edible oil and syrup as raw materials, and the proportion of water is very small. Edible oil is high-quality cooked sesame oil in northern Shaanxi, sugar is fine sand sugar, and syrup is rice slurry.
Taikoo cake has four characteristics: First, it is extremely soft. If you put the fresh cake on different containers, it will bend with the different shapes of the containers. If put in a small bowl, it will bend to the bottom of the bowl; Second, the fragrance is attractive, sweet and refreshing, and the aftertaste is endless; Third, it is chewy, instant in the mouth, with a long aftertaste and excellent taste; Fourth, it is easy to preserve, and if it is put in the right place, the color and taste will be the same within half a year.
