Knife Shaved Noodles
Knife Shaved Noodles, also known as "extra horse harnessed by the side of a team", is a kind of traditional noodle dish in Shanxi Province, one of the "Ten Great Noodles of China". Knife-shaved noodles are popular in Shanxi Province and its surrounding areas, according to legend, is the Tang Dynasty extra horse harnessed by the side of a team, Chai Shao, with a variety of flavors of shame, seasoning to eat, to Datong, Shanxi, knife-shaved noodles is the most famous.
Shanxi knife-shaved noodles are thick in the middle and thin on the sides, shaped like willow leaves; they are smooth on the outside and tender on the inside, soft but not sticky, and the more you chew them, the more flavorful they are. It is known as one of the five major noodles in China with Beijing's fried noodles, Henan's chow mein, Hubei's hot noodles, and Sichuan's dan dan noodles, enjoying a great reputation as one of the most representative business cards of Shanxi's cuisine.
