200 grams of soybean water 1350 grams of internal fat 1 bag (3 grams) of purified water 15 ~ 20 grams (for removing internal fat) homemade bean curd.

1. Soak soybeans in water for 8-20 hours, changing water several times in the middle to remove the beany smell.

2. Drain the soaked soybeans and put them into the soymilk machine, and add 1350g of water. I used the fruit and vegetable function of the soymilk machine and repeated it four times. The finer the better.

3. Use the time of beating soybean milk to melt the internal fat, 1 package internal fat (3g) and 15 ~ 20g water. Only the least hydration energy is needed to open the internal fat.

Filter soybean milk.

1. Put the filtered soybean milk on the stove and let it burn. Boil over medium heat (be careful not to overflow the pot), turn to medium heat for about 5 ~ 7 minutes, and then cook for a while to remove the beany smell. Skim off the floating powder with a sieve. Soymilk is cooked, and you can drink it directly if you want.

Tofu brain production: 1. Put the melted internal fat into the rice cooker and turn on the heat preservation function.

2. Cool the cooked soybean milk for 1 ~ 2 minutes. There is a thin layer of tofu skin on the surface of soybean milk. Pick it up with chopsticks and let it cool (you can put it inside when making marinade).

3. Pour the soybean milk into the inner container of the rice cooker quickly, raise it a little higher when pouring the soybean milk, use this impact force to mix the inner fat and soybean milk evenly, and skim the floating end with a screen. Cover the lid (cover the inner container with gauze to absorb evaporated water and make the surface of tofu smoother and more delicate) and keep the temperature for about 30 minutes. It doesn't matter if it takes a long time.

4. Use this time to make gravy.

Braised sauce: add a proper amount of water to the pot, add chopped auricularia, mushrooms, Shanghai green (or oily wheat vegetables) and bean curd skin to boil, and season with plain oil, soy sauce, soy sauce and salt. Thicken the soup with water starch and add sesame oil. A bowl of bean curd brain will do.

The practice of tofu brain

Step 1: Weigh 120g organic soybean and wash it. My little jar is just full of 120g. You can also find a suitable container and use it to measure. You can use this container directly next time.

Step 2: Soak the washed soybeans in clear water for one night until they are completely swollen.

Step 3: Put the soaked soybeans into a cooking machine, pour in half water and start grinding.

Step 4: Fold the clean medical gauze into two layers and spread it on a clean container.

Step 5, pour the ground soybean milk into a container covered with gauze, lift the periphery of the gauze and squeeze out the soybean milk with both hands.

Step 6, pour the remaining small amount of bean dregs back into the cooking machine, and add the remaining clear water to grind the pulp again.

Step 7, the ground soybean milk is also filtered into the basin with gauze, and all the soybean milk in the basin is filtered through the strainer and poured into the pot.

Step 8: Bring to a boil with high fire. After boiling, cook over medium heat for more than 5 minutes. This process is inseparable from people. Soymilk is very easy to boil and bubble out of the pot. It should be closely monitored and stirred from time to time.

Step 9: Prepare a clean container and put 5g glucono delta-lactone in it.

Step 10: After the soybean milk is cooked, turn off the fire and cool for 30 seconds to 1 min. Then pour the soybean milk into the container prepared in step 9. When pouring soybean milk, pour it from a height of about 30 cm from the bottom of the container, cover it and let it stand for more than 5 minutes.

Step 1 1: Wash garlic cloves and mash them with a little salt.

Step 12: Wash the coriander and cut it into small pieces. Wash the shrimp skin and put it in a small bowl. Pour in soy sauce, vinegar, garlic paste and a little cold water, then add sesame oil and mix well.
