How to brew sorghum liquor-traditional brewing technology.
The traditional brewing process of Xiaoqu kaoliang liquor is as follows:
1, selecting materials and fully drying high-quality sorghum with particles.
2. Operation: Soak sorghum in clear water for 8- 12 hours, then clear the warehouse and drain.
3. Process: steaming, spreading and cooling to 25 degrees, bending and mixing evenly, stacking height not exceeding 15cm, covering with sacks, cooling on the ground for 24 hours, fermenting in a tank for 12 hours, adding 40 kilograms of water per 100 kg of sorghum for sealed fermentation, and distilling to obtain the original technological liquor. (Liquor starter must be a soil starter made of Polygonum hydropiper, with 7 soil starter per 100 Jin of sorghum).
