The difference between freeze-dried coffee and instant coffee

Today's installment gives you the difference between ordinary instant coffee and freeze-dried coffee!

Instant coffee is made by spray drying process, which sprays the concentrated coffee liquid in hot air at a high temperature to quickly vaporize the water and form dry particles or powdered solids. Freeze-dried coffee, on the other hand, uses the freeze-drying production process to sublimate the moisture of frozen food materials directly from ice solids to steam without the melting of ice.

Freeze-dried coffee retains the flavor of coffee crude oil, brewed coffee taste flavor slightly better, and dissolve faster. And instant coffee after high-temperature water coffee aroma will overflow with the steam, high temperature will also destroy the structure of nutrients in the coffee, so the traditional instant coffee in the taste is not as good as freeze-dried coffee.

In terms of price, instant coffee is usually made from lower-priced coffee beans, and coffee beans that do not meet the demand for freshly ground coffee are generally used to make relatively inexpensive instant coffee that does not require a high level of taste. Freeze-dried coffee because of the ability to retain the flavor of the coffee among the material, using more boutique beans, and processing procedures are complex, the price is more expensive than instant coffee.

Overall, freeze-dried coffee is superior to instant coffee in terms of taste, dissolution speed and price.
