Why isn't watermelon so sweet that it's used to make sugar?
Time-consuming:The sweet, juicy watermelons we eat now didn't start out that way. Watermelons evolved from generation to generation, which is a long process that takes a long time. The sugar in watermelon is mainly glucose, and sugar cane is sucrose. Glucose is difficult to purify and crystallize, and the quality is not as good as sucrose at the same process difficulty. If watermelons are used for sugar, on the one hand, the material is not as convenient and plentiful as malt or sugar cane. On the other hand, when they were first introduced, the yield was limited and the quality average. Moreover,if watermelons are used in the manufacture of sugar, at least the pulp and seeds must be removed, and the process is more cumbersome than in the well-established methods of making sugar. If there is no significant advantage in sugar content or yield, watermelon will not be used as a raw material for sugar production under the traditional inertia.
Moisture content:Watermelon is huge, but has too much moisture content to work with. If you then make sugar, it doesn't have the pure, original flavor. Using it to make sugar is undoubtedly a buyer's remorse. Watermelon has too much water content and peeling it requires a lot of work. Sugar cane requires only a hard squeeze of the juice, as watermelon seeds are not easily handled so cleanly, thus allowing for the avoidance of sugar impurities.
Sugar cane is well suited for raising and storing. Sugar mills do not harvest sugarcane when it is ripe. However, sugar mills are looking for a regular time to harvest the cane. Farmers cut the sugarcane and bring it to the mills. There is a big time difference between them. A particular early variety of sugarcane may be ripe for a month before the sugar mills start harvesting it. During this time, the sugarcane won't go bad even if it stays in the ground. This watermelon definitely won't.
Sugar cane is divided into fruit cane and sugar cane. Normally we eat fruit cane. The sugar content and hardness of sugarcane is higher than that of fruitcane. The sugar content of sugar cane is basically two to three times that of watermelon. Sugarcane is a c4 plant with a higher acreage than watermelon and a much higher sugar content.
