Jumping fish is one of the traditional famous dishes in Tianjin. It comes from Tianjin Fang Tianyi Hotel and has the reputation of "the best workshop in the world". Fang Tianyi Restaurant opened on 1879 (the fifth year of Guangxu reign). It is located in Xinkai Road, Hongqiao Hutong, Tianjin, and features Tianjin-style dishes. However, it was abandoned several times and closed for business. In 1980s, Tianjin catering industry reopened Fang Tianyi restaurant. At present, Fang Tianyi Restaurant is located in the big hutong business circle at the mouth of Sancha River in Haihe River. The main famous dishes are "jumping carp", "money purple crab" and "bitter flower fish" "Jumping carp" is characterized by tender scales, great acidity and sweetness.
