First, select high-quality glutinous rice and soak it in clear water for three or four hours, so that it can quickly absorb water and soften, which is more conducive to cooking. Next, wash the zongzi leaves for later use. Slice the braised pork, peel the duck egg yolk and soak the red beans until soft. Then take out the soaked glutinous rice and drain it, add a proper amount of salt and cooking oil, and stir well.
Next, overlap the two leaves into a right triangle, fold the tip in half, and carefully open the two corners from the crease to form a pocket. Pour a spoonful of glutinous rice into your pocket, press a depression on the rice flour, add a proper amount of meat strips, duck egg yolk and red beans, and cover with a spoonful of glutinous rice. Finally, hold the two sides of the rice leaves by hand, fold the rice leaves inward and cross the two ends at the seal.
Put the prepared zongzi into a large pot, add enough water, soak all the zongzi in the water, cover the pot, and cook slowly for about 60 to 70 minutes with low heat. The specific time varies according to the size of zongzi and the hardness of the material. If you use a pressure cooker, you only need to cook for about 20 minutes.
Finally, the cooked handmade zongzi is taken out, cooled and eaten or stored.
