Why do some Shaoxing rice wine taste like shochu?
Shaoxing yellow rice wine is sour, sweet, fresh, pungent, bitter and astringent, and the burnt taste is indispensable. Yellow rice wine and shochu are similar in composition, both of which are composed of alcohol, high alcohol and acetaldehyde, with alcohol as the main component.
