Practice of Yi Shan Rice Cake in Cantonese Style

Red bean glutinous rice yam cake

Use 80g red beans, 60g coix seed, 200g yam, 70g glutinous rice flour and a little water.

20g of brown sugar and 30g of water as auxiliary materials.

The first is preparation.

Red beans and coix seed must be soaked in advance, otherwise it will not soften easily. (It is best to soak for one night in advance) Especially red beans, it will take a long time anyway.

After peeling the yam, wash it and cut it into pieces.

20 grams of brown sugar and 30 grams of water are soaked in brown sugar water for later use.

Steam (or boil) these three ingredients separately. Yam is easy to cook. After peeling, put it in a steamer and it will be completely cooked in 20 minutes at most. Mature yam mashed. You can rub the yam in a fresh-keeping bag.

Add glutinous rice flour into yam mud granules, and add a little water according to the situation.

Pour in brown sugar water. Stir thoroughly and evenly.

If you want a more delicate taste, you can also sift the yam mud in this step.

Add a lot of water to the soaked red beans and coix seed, put them in a rice cooker and cook them with a porridge button.

Pour red beans and barley into the yam paste and stir well. Pour it into a plate with oiled paper at the bottom.

Steam in a steamer for 30 minutes.

Take it out and cut it into pieces.

Tips:

Red beans and coix seed must be fully soaked and then cooked to make a soft yam cake.

Try to add as little water as possible, and the drier the paste, the easier it is to form.
