How to cook braised turtle?
Accessories: 8 grams of starch (broad bean)
Seasoning: salt 5g soy sauce 15g onion 25g garlic 20g ginger 10g monosodium glutamate 2g pepper 1g lard (refined) 150g sugar 2g each.
The method of stewing turtle;
1. Slaughter and wash the soft-shelled turtle, cut off the head, feet and shells, remove the internal organs, leave the skirt, and chop it into 5 cm square pieces;
2. Put the wok on the fire, pour in the cooked lard, heat it to 60%, add the soft-shelled turtle and fry it in the pot.
3. Stir-fry ginger slices and garlic in a wok, and add 1000ml sparerib soup, soy sauce, refined salt and monosodium glutamate to cook;
4. After boiling, add the soft-shelled turtle, cover the pot and simmer. When the soup is thick and the soft-shelled turtle is crisp and rotten, add the onion, thicken it with wet starch, pour in cooked lard, take out the pot and sprinkle with pepper.
