Method 1: Cold storage method

This kind of cold storage is better, but we should pay attention to the temperature control of storage, and because temperature is the most important environmental factor of jujube storage life. Specifically, jujube can be precooled and sterilized before storage. Before precooling, the temperature in the warehouse should be reduced to -2℃, and the temperature in the warehouse should be kept at 0℃ during precooling. At the same time, TBZ aerosol (3-6g/m2) was used to fumigate and disinfect jujube. After precooling, it should be packed in a warehouse and put into a perforated polyethylene film bag with a lining of 0.03-0.05 mm. The storage temperature of red dates should be 0℃ and the warehouse temperature should be-1℃. In a certain temperature range, the lower the temperature, the better the storage effect. When the temperature is lower than 0℃, the respiratory intensity of jujube is less than 50% of that at 20℃. At the same time, low temperature can slow down the transpiration rate of fruit water and inhibit the activity of microorganisms. However, if the temperature is lower than the freezing point of jujube fruit, it will cause frostbite to jujube fruit. Different jujube fruits have different freezing points and need further study.

Method 2: Traditional jujube preservation method.

The traditional preservation method is generally to dry fresh red dates in the sun, or make them into processed products such as drunken dates and candied dates, which can not only prolong the preservation time, but also have another flavor. Although jujube has high sugar content and is resistant to storage and transportation, its vitamin C content is only 0. 12~0. 19% mg/g, which is less than 5% of fresh jujube. Although the vitamin C content of candied dates can be kept at 2mg/g, the supply period of fresh dates for processing is short, which seriously affects the yield of candied dates.

Method 3: Modified atmosphere method

Fruit, like our human body, needs to breathe. This method is to adjust the gas composition in jujube storage environment, adjust the respiration of fruit, and inhibit the growth and reproduction of microorganisms, so as to achieve the purpose of preservation. At present, the research results on the effect of gas composition on modified atmosphere storage of jujube are inconsistent, so different storage methods should be adopted according to different situations.

Specific storage methods commonly used in the home:

1, indoor natural preservation

Take the packaged red dates out of the plastic bags we bought, then put them in cloth bags or cartons, and turn them frequently to help prevent insects.

2, low temperature storage in the refrigerator

As long as there is a refrigerator at home, you can bring it. It's simple. Just seal the red dates in plastic bags and put them in the refrigerator. If it is to be stored for a long time, it should be put in the freezer. Remember to put red dates in a plastic bag next to the heater, which is the easiest to ferment and deteriorate.

Jujube has high sugar content and great hygroscopicity and oxidation, so the storage temperature and humidity should be reduced as much as possible during storage. Low temperature storage is the main measure to reduce the loss of vitamin C in jujube fruit, and the dry environment is not conducive to the growth and reproduction of microorganisms. During the storage of jujube, excessive dehumidification will cause fermentation deterioration and mildew, and pests such as rice borer and wheat moth will also harm jujube.
