Preparation method and raw materials of soy sauce
Tools/raw materials: soybean, wheat, salt, bran, onion, ginger and cinnamon.
1, choose high-quality soybeans, wheat, etc. As the main raw materials, auxiliary materials such as salt and bran need to be prepared.
2. Mix soybean and wheat, grind into fine powder, and add water, bran and other auxiliary materials to make soy sauce koji. Then put the soy sauce koji into a fermentor, add salt water and ferment naturally for several months to produce soy sauce.
3. Squeeze the fermented soy sauce koji to separate the soy sauce. Then put the soy sauce into the pot and heat it, and boil it continuously to evaporate the excess water, so that the concentration of soy sauce will gradually increase.
4. While cooking the soy sauce, add seasonings such as onion ginger and cinnamon to make the soy sauce more fragrant and tasty.
Finally, store the soy sauce in a container, such as a wooden bucket or a clay pot, for storage and use.
