How to fry the oil cake?

Mix dry yeast and white sugar into flour and stir well.

Pour in water, stir with chopsticks while pouring, stir the flour into a flocculent shape, and then knead it into a smooth dough. The freshly mixed dough may not be very smooth. It doesn't matter. As long as the cover is covered 10 minute, the water will completely penetrate into the dough, and then it will be smooth after kneading.

Cover the kneaded dough and put it in a warm place for fermentation (I put the dough in a pot and put it in a steamer with hot water, but I didn't expect it to grow very big at 1 hour) until it was covered with honeycomb eyes.

In order to have the flavor of noodles, I added 10g edible alkali and a little warm water to the cooked noodles (because noodles are made of yeast, there is no need to add alkali).

Pour a lot of oil into the pot and heat it to 70% (there must be more oil). You can try the oil temperature and throw a small piece of noodles into the oil. If you can float to the oil surface immediately, it means that the oil temperature is just right at this time.

Knead the dough into 30g pieces of flour, and gently knead it into a round shape (flour can't be used for kneading dough, but you can apply a little oil on your hands and panel to prevent it from sticking. If it is used for kneading dough, the fried cake will become turbid).

Roll an oval cake with a rolling pin, not too thin, probably less than the thickness of 1 cm, and draw two vertical lines in the middle.

Pick up your hands and gently drag (this is longer and thinner) into the oil pan.

Put it in and it will float immediately, then fry both sides on medium heat until golden brown. Pay attention to turning over.

When frying, it is best for two people to cooperate, one is to make cakes and put them in the pot, and the other is to look at the fried cakes with long chopsticks.

You can put three in the pot and fry them together at one time. Because they are not put in at the same time, there are mature ones, so you must pay attention to observation.

The fried oil cake is placed vertically in the container, which is beneficial to control the excess oil inside.
