Method for making red bean cake

Ingredients: 250g red beans, 4 cups of boiled water, 3/4 cups of water 1/2 cups of sugar or sticky rice flour 1/2 cups, 4 cups of clear flour 1/4 cups, 2 tablespoons of oil, water caltrop 1 kg, 5 kg of flour per kg, and half a catty of sugar.

Production steps: wash red beans, remove impurities, soak in cold water for 2 hours, and drain. Mix the two dry powders evenly. Put the red beans into a pot with a depth of 3 liters, add 4 cups of boiling water, cover it, and the water will boil after 5 minutes of intense heating. Switch to medium fire (70% firepower) for 40 minutes, and then use high fire for 20 minutes. At this time, the water in the pot is about 1 cup, with bean juice secreted and red beans retained. In a large bowl, add 1/2 cups of water, mix well with sticky rice flour and clear noodles, and add 1 cup of boiled red bean juice. Dissolve sugar and oil in red beans, slowly pour in the slurry, and keep stirring until uniform. Pour the red bean cake into a greased long dish (2 1× 1 1×6 cm), wrap it tightly with plastic film, cover the four corners with aluminum foil, and the dumb side faces outward. Place the cake tray near the edge of the turntable and heat it for 8 minutes. Adjust the cake pan to 180 degrees, and then heat it with medium fire (70% firepower) for 7 minutes. Set aside, cool and cut into pieces.

Ingredients: adzuki bean100g, water chestnut powder 350g. Seasoning: 150g rock sugar, 20g vegetable oil.

Practice: Wash the red beans, soak them for 2 hours, remove water, then put them in a pot, add 5 cups of water to boil, and then cook them with low fire until they bloom (about 1 hour). Separate the water in the red beans, about 2 cups of water. If it is not enough, you can add it with boiling water. Boil red bean water, red bean and rock sugar, add oil and mix well. Dissolve water chestnut powder in 1 glass of water, slowly pour it into sugar water and stir until it becomes thick (slow fire), pour it into a cake basin, steam it for 30 minutes on high fire, cool it and put it in the refrigerator, and enjoy it at any time.

Ingredients: 250 grams of red bean stuffing (ready-made in supermarket), appropriate amount of agar (less than half of a rice bowl), and a little osmanthus.

Production method: soak agar in cold water (at least half an hour), then add it and cook it with low fire for 15 minutes until the agar is almost dissolved. The utensils for cooking agar must be washed in advance, and there can be no oil. Put the bean paste or bean paste stuffing into a large bowl, pour agar water, stir well, and add a little osmanthus to taste (because the bean paste or bean paste stuffing bought in the market has already put sugar, you don't need to put sugar yourself. If you make your own bean paste or bean stuffing, you can add sugar according to your taste. If you have a food mixer at home, you can directly pour the bean paste and agar water into it to stir. Then it can be poured into a flat plate, cooled at room temperature, frozen, and cooled in a refrigerator. You can cut it into diamonds or cubes when you eat it.
