A complete collection of methods for home-cooked rice handmade noodles

Cooking ingredients: flour, edible salt, warm water, potatoes, cabbage, tomatoes, fresh lean meat, onions, ginger, garlic, five-spice powder, soy sauce and oyster sauce.

Cooking method:

1. Prepare proper amount of flour and add proper amount of salt. 500 grams of flour is mixed with 260 grams of warm water, and stirred continuously with chopsticks to make flour floc. Then knead it by hand and knead it into a smooth dough. Put the dough into a bowl and stir for 20 minutes.

2. Make some noodles in the process of dough proofing. Prepare two potatoes, slice them first and then dice them. Cut a Chinese cabbage into strips and cut it short. Prepare a tomato, slice it first, and then dice it. Prepare some lean meat and dice it. Cut some onions, ginger and garlic.

3. Pour an appropriate amount of oil into the pot, add diced meat after the oil is hot, stir-fry until the diced meat is dry and fragrant, then add minced onion, ginger and garlic, and continue to stir fry. Stir-fry a little spiced powder, stir-fry constantly, add some soy sauce and add tomatoes. Stir-fry tomatoes, add potatoes and cabbage, stir well, add appropriate amount of water, season with salt and pour some oil. Cover the pot and cook until the potatoes are cooked. When cooked, tick some thickening powder to make the soup thicker.

4. Knead the fermented dough again and divide the dough into two pieces with a knife. Press it with a rolling pin, roll it up from one end after pressing it open. Roll the dough back and forth into large pieces like this.

5. after rolling thin, sprinkle some dry flour on it, fold it from one end, carry it from the other end and put it in the middle. Stagger the position back and forth, cut the noodles into thin strips, and then roll them up.

6. Boil water and add noodles. After cooking, take it out and put it in a bowl. Pour the gravy into the noodles, and a delicious handmade noodle is ready.
