Home-cooked practice of braised pork

The first method: Braised pork belly.

Ingredients preparation: pork belly, salt, soy sauce, rock sugar, onion, ginger, cooking wine, vegetable oil and water.

Braised pork belly:

Step 1: Wash the pork belly and cut it into 3 cm square pieces. Cut the onion and ginger into small pieces.

Step 2: put the cut meat into a cold water pot, boil it for 2 minutes after the fire, take it out, rinse off the floating foam on the meat surface with warm water, and drain the water.

Step 3: Heat the pot, pour in vegetable oil (about 60 ml), adjust to medium heat, and add rock sugar.

Step 4: Stir fry slowly until the rock sugar melts and turns red, and the big bubbles in the oil turn into small bubbles. When the bubbles are almost gone, the sugar color will explode.

Step 5: immediately put the cooked pork belly in, stir fry quickly, and wrap the surface of the meat with sugar; Then add cooking wine, soy sauce, onion and ginger slices, stir-fry evenly, add appropriate amount of water to avoid streaky pork, turn to low heat after the fire is boiled, and cover it for about 1 hour.

Step 6: After the meat stew 1 hour, open the lid and add salt.

Step 7: Turn the fire to dry all the juice and turn off the fire.

Braised pork belly tips

Step 1: Pork belly is as fat and thin as possible, and you can see that the quality of five layers of meat (three layers of fat and two layers of thin) is better.

The second step: stir-fry the sugar color with medium fire. Small fire, too slow, big fire, easy to fail.

Step 3: when frying pork belly, put less oil, because the meat itself will produce oil. If you put too much oil, braised pork will taste greasy.

The second method: Braised pork belly.

Ingredients: 500g pork belly, 25g sugar, 6g soy sauce, 8g vinegar, 1 star anise, 6 cloves garlic and 3 slices ginger.

Preparation: Appropriate amount of oil and salt.

Steps of braising pork belly in brown sauce

Step 1: Boil the pork in a pot for 5 minutes, and skim off the froth.

Step 2: Take out the pork and cut it into small pieces.

Step 3: Prepare one tablespoon of sugar, one teaspoon of soy sauce, one teaspoon of vinegar, one star anise, six cloves of garlic and three slices of ginger.

Step 4: Pour the right amount of oil into the pot and heat it to 70% to 80% heat.

Step 5: Add a tablespoon of sugar and stir with a spoon. After the sugar bubbles, the bubbles will go down again. When the sugar is dissolved in the oil, it is immediately poured into the chopped pork. Neither too early nor too late. Be sure to grasp it well, this step is the most critical step to make delicious braised pork.

Step 6: After pouring in the meat, stir-fry until the color is even.

Step 7: Then pour in boiling water, and be sure to add boiling water. This step is the most critical step to make braised pork soft and rotten. Add soy sauce, vinegar, star anise, cinnamon, garlic and ginger, and finally drop a few drops of white wine. Simmer for 30 minutes.

Step 8: After 8.30 minutes, add salt, stir to collect juice, and a soft, rotten and delicious braised pork is ready.

The third type: the practice of pork belly with honey sauce

Ingredients preparation: pork belly, ginger slices, cooking wine, chicken essence, soy sauce, refined salt, salad oil, white sesame seeds and barbecued pork sauce.

Step 1: Wash the pork belly and cut it into pieces of appropriate size for later use.

Step 2: Heat the wok, pour salad oil, add ginger slices to make it fragrant, and then pour the meat into the wok and stir fry.

Step 3: Stir-fry the meat over medium heat until the meat is oily and the surface is yellow. Pour in cooking wine, add two spoonfuls of barbecued pork sauce, one spoonful of soy sauce and a little salt until the meat changes color.

Step 4: Take the pork belly out of the wok and put it in the casserole. Add a proper amount of hot water to soak the meat and bring it to a boil, then simmer for about half an hour.

Step 5: Take out the pan and put it on the plate, sprinkle with white sesame seeds and serve.
