What kind of dish is Kung Pao Chicken?

Kung Pao Chicken, is a famous Chinese and foreign specialties and traditional dishes. It is included in Lu Cuisine, Sichuan Cuisine, and Guizhou Cuisine, with differences in ingredients and practices. [1] The origins of the dish are related to the diced chicken in the sauce of Lu cuisine and the diced chicken with hoisin sauce of Guizhou cuisine, which was later improved and developed by Ding Baozhen, the governor of Shandong and Sichuan in the Qing Dynasty, to form a new dish, Kung Pao Chicken, which has been passed down to the present day, and which has been categorized as a Beijing court dish[2] .
