Origin and History of Shabu Shabu

Shabu-shabu is one of the traditional Chinese cooking styles that originated in the northern region. It is said that shabu-shabu can be traced back as far as the Yuan Dynasty, when the Mongolians, who preferred to eat raw meat, put thinly sliced lamb in hot water and then dipped it in a sauce.

Over time, shabu-shabu evolved into a unique style of cooking. During the Ming and Qing dynasties, shabu-shabu became a delicacy for the court nobility, and then gradually spread to the people. Today, shabu-shabu has become a traditional and popular dish in northern China.
