What is the difference between Daqu and Xiaoqu

In recent times, wine quarts have been broadly categorized into five types, which are used for different kinds of wine. They are:

Maqu: mainly used to make yellow wine; Xiaoqu: mainly used to make yellow wine and Xiaoqu wine; Redqu: mainly used to make redqu wine (a variety of yellow wine); Daqu: used to make distilled spirits; Bran: is a modern development of a kind of wheat gluten as a raw material, through the inoculation of pure species of mold. It can be used to replace part of Daqu or Xiaoqu. Bran curd liquor is a major process in China's liquor production today. Its liquor production accounts for more than 70% of the total production.

Difference between Daqu and Xiaoqu liquors

Daqu liquors, generally have a rich curved aroma, mellow flavor and a long aftertaste. For example, Moutai uses high-temperature bigquot; Fenjiu uses medium-temperature bigquot.

Small-quart wines, too, have their own characteristics, i.e., fragrant, mellow and elegant, such as Guilin Three Flowers Wine, Guangxi Xiangshan Wine, Guangdong Changle Burning and so on.
