Method for making handmade wet rice noodles in Hunan

1 Rice flour is required first. Not all rice can be made into rice noodles. Nowadays, handmade rice noodles are generally made of aged early rice, and the made rice noodles are tough and not easy to break.

2. Then, you can buy aged early rice from the local granary and grind it into pulp. The aged early rice should be soaked in water, and when the rice grains become soft, the rice should be ground into pulp with an electric mill.

3. Next, prepare two washed bowls, add appropriate amount of salt, monosodium glutamate and soy sauce to each bowl, and then grab a handful of chopped shallots and coriander and put them into the bowls.

4. Then heat the oil pan, pour a little hot oil on the coriander with a spatula, and pour a proper amount of oil into each bowl.

If the beaten pulp is too dry, you need to add some water to dilute the rice pulp. Rice slurry should not be too dry or too thin. Next, find a flat stainless steel plate, put a little oil on it, and pour the rice slurry evenly into the plate, not too thick.

6. Boil the water in the pot, steam the disc in the pot for 3-5 minutes and take it out. Grease the middle of each piece. Just cut it into strips with the width you like.
