There are four major Lai in history, namely, Shandong, Sichuan, Zongyang and Guangdong. At the end of Qing Dynasty, Zhejiang cuisine, Fujian cuisine, Hunan cuisine and Anhui cuisine were divided into four new local cuisines, which constituted eight traditional cuisines in China.
