What is burning noodles?
Burning noodles is one of the most distinctive traditional snacks of Han nationality in Yibin, Sichuan. Formerly known as Xufu burning noodles, it used to be called fried noodles. Because its heavy oil is anhydrous, it burns immediately after ignition, hence the name burning noodles. The snack takes local high-quality water noodles as the main ingredients, Yibin broken rice sprouts, ground sesame oil, fresh suet oil, star anise, kaempferia kaempferia, sesame seeds, peanuts, walnuts, pepper, fine pepper, monosodium glutamate, leeks, pea tips or spinach leaves as the auxiliary materials. The noodles are cooked, fished out, dried and deodorized, and then seasonings are added according to the traditional process. Because burning noodles are plain noodles, after the reform and opening up, some new members have appeared in the burning noodles family, such as burning noodles with meat, burning noodles in soup and so on. The ancient burning noodles bring more taste feasts to Yibin people who like it.
