How is tofu made?

Ingredients: soybean, stone mill, clear water, wooden barrel, gypsum powder.

Tofu making steps:

1, pick soybeans and pick some that have been bitten by insects. Soak soybeans in a large basin of water for about 5 minutes to make them soft and swell, and float the rotten ones that were missed and not picked out before.

2. After washing the millstone, pour the soaked soybeans into the millstone plate. There is a small round hole in the middle of the millstone, along which soybeans can slide into the millstone and be ground into pulp. When grinding, add water at the same time and add it for a while. Control the amount of water added each time.

3. After the soybean milk is ground, put it in a large iron pot and cook it. The cooking process should be cooked with low fire. A big fire will stick to the bottom of the pot. Pay special attention when the soybean milk is about to boil, and be sure to take a ladle of water in your hand. Once boiled, the slowly rising foam will expand quickly and high. Sprinkle some water on it to prevent it from overflowing the pot.

4. After boiling, dry it, and then spread a piece of gauze on the bucket specially bought for tofu, and pour the soybean milk into the bucket one by one.

5. Pick up the gauze laid on the barrel, form a bag and seal your mouth. Put it on the handle of the bucket and effortlessly put it on the bar of the bucket for a while to let the soybean milk flow down automatically. Then when it was almost finished, I began to press the bag with a big shovel and press it down hard.

Squeeze out the soybean milk contained in the bean dregs, and press it repeatedly until the bean dregs are pressed dry and there is no water to flow out, until the bag mouth is loosened and the bean dregs are directly poured out.

6. Mix gypsum powder with clear water, put it into a bucket and stir, then put the soybean milk into a spoon and bump it up and down from a height, and repeat it until it is satisfactory.

7. Leave it for about one and a half hours. You can pick up the cover cloth and gently shake the bucket. You can see that soybean milk has turned into tofu.
