How are the ditty and Daqu of wine made?
Daqu liquor refers to liquor brewed with Daqu as saccharifying starter. Daqu liquor is brick-shaped, and it is made from wheat, barley, peas and other raw materials by crushing, stirring and pressing with water. Then naturally culturing for 25-40 days at the room temperature of 45-70 DEG C, or adding koji seed mother seeds, so as to mutually inoculate microorganisms, and finally obtaining the product. Because of its large volume and brick shape, it is named "Daqu". Daqu liquor includes Maotai, Fenjiu, LU ZHOU LAO JIAO CO.,LTD, Xifeng and Du Kang.
Daqu liquor (or Xiaoqu liquor) refers to liquor brewed with Xiaoqu as saccharifying starter. Xiaoqu liquor is made from rice and a little Polygonum hydropiper powder, and it is cultivated at room temperature of 25-30 degrees for 7- 15 days. Because of its small size, it is named "Xiaoqu". Xiaoqu liquor includes Guilin Sanhua Liquor, Liuyang River and Guangdong Yellow Rice Wine.
In addition, there is bran koji wine, which refers to the wine brewed with bran koji and yeast as saccharifying starter. Bran koji is loose and made of bran, so it is called bran koji. Such as Lingchuan wine, Liuquxiang and so on.
