What is carmine?
Carmine, also known as Acid Red 3R, is a water-soluble synthetic pigment, which is bright yellow-red and monochromatic. Soluble in water and glycerol, insoluble in ethanol, insoluble in oil, no poisoning in animal tests. Carmine is allowed to be added to 30 kinds of food in 12 category, including casing, soybean milk beverage, shrimp slices, candy coating, ice cream and so on.
Properties and indicators:
Yellow when pH = 4.5; Ph = 5.0 is orange; Ph = 5.5 is red; PH≥6.0 is purplish red. The pigment has good light fastness in orange, red and purple, but it has poor light fastness at PH values of about 4.5 and 7.0-7.5. Good thermal stability. When it meets iron ions, the color tone becomes pale or colorless.
