Wash and peel the lotus before washing!

Cut into thin slices. When cutting the lotus, boil a pot of water for later use.

When the water boils, pour in lotus slices and let it boil for a minute or two.

Take it out while it is hot and pour in proper amount of white vinegar or rice vinegar.

Cover and stew for a few minutes.

Add all seasonings and stir well. You can mix more, it's cold during the Chinese New Year, so it's easy to keep!
