How to make ginger sugar?

material

Ginger150g

230 grams of water

50 grams of brown sugar

Sugar100g

Maltose 250g

Glutinous rice flour/coconut/sugar (finally, cut ginger sugar and roll it up, which is not easy to stick)

The practice of homemade ginger candy

First, prepare all the materials, cut the ginger into small pieces and slice it (because I hit it with a broken wall machine, I chopped it casually). First pour some glutinous rice flour and stir-fry it in the pot, and then use it in the last step to prevent it from sticking (the glutinous rice flour bought is white, and it will be fine if it turns yellow after stir-frying). You can also use coconut milk or sugar.

(2) This is the ginger broken by the wall breaker. I didn't add water. Every machine is different. Maybe you need to add some water and stir it together. It doesn't matter. (Chopping without a wall breaker. )

(3) put water, brown sugar, white sugar and maltose into a pot and boil them into sugar water;

(4) Then pour in the ginger and stir fry constantly (this process is a bit tiring, it takes about 20 ~ 30 minutes).

5. Stir-fry the water and sugar dry, so that you can hang it on the shovel (you can also get a bowl of water, drop a few drops into it and solidify it).

⑥ Use oiled paper as the bottom, pour it on the mold and fix it, and let it cool (ignore the dark slag in my pot, and fix it into a rectangle or a square, which is convenient for dicing and careful scalding).

⑦ After cooling, you can start to cut into pieces, which is more difficult to cut. It's faster with scissors.

⑧ Cut into pieces, knead them into dough in glutinous rice flour, and then put them in jars or bags.
