Production technology of Enshi Youlu tea

Enshi Youlu tea is a kind of green tea with tea buds as the main raw material. In the production process, it needs to go through the steps of picking, fixing, rolling and drying.

1. Select

The main raw material of Enshi Youlu tea is tender leaves. Tea trees grow fast and are usually picked in spring. Pickers choose to pick by hand in the morning, and strictly control the picking time and method to ensure the freshness and quality of tea.

Step 2: Kill the animals.

After picking, the young leaves should be treated immediately to prevent the leaves from discoloring. The purpose of enzyme fixation is to destroy enzymes in tea cells and prevent intracellular oxidation reaction. Usually there are two ways to kill green, one is steam killing and the other is baking killing. Enshi Youlu tea is usually steam-fixed, which can retain the original aroma and taste of tea.

The tea leaves after fixation need to be twisted to squeeze out the juice in the tea leaves and achieve the effect of strips. There are two ways of rolling: manual rolling and machine rolling. Enshi Youlu tea is generally kneaded by hand to make the tea more delicate.

The twisted tea leaves need to be fermented to a certain extent to increase the color and taste of the tea leaves. Enshi Youlu tea is unfermented green tea.

The twisted tea leaves need to be dried to prevent mildew. There are two drying methods: natural air drying and machine drying. Enshi Youlu tea is generally air-dried naturally, which makes the tea have better taste and aroma.
