A few days ago, the application for the project "Processing Technology of Fermented Health Pepper Products" put forward by the College of Food Science and Technology of Hunan Agricultural University was officially approved by the Ministry of Agriculture. Relevant experts believe that this is a rare opportunity to increase the scientific and technological content of Hunan pepper products, improve the economic benefits of Hunan pepper products and promote the industrialization process of Hunan pepper. In this regard, the reporter interviewed Professor Xia, Dean of College of Food Science and Technology of Hunan Agricultural University.

Dean Xia believes that the time is ripe for the industrialization of Hunan pepper. He introduced that the pepper production in Hunan now accounts for about 5% of the whole country, while the consumption accounts for 10% of the whole country. The traditional pepper producing areas in China are "Sandu" (Wang Du, Yidu and Chengdu) and "Liangqing" (Chongqing and Baoqing), and Baoqing in the two celebrations is in Shaoyang, Hunan. Especially in recent ten years, Hunan has cultivated more than 200 new varieties with local characteristics, which not only ensures the output of raw materials, but also has diverse choices and strong market demand. Dean Xia told reporters that the conditions for pepper industrialization in Hunan have been met, but there are still several technical problems to be solved in order to truly realize pepper industrialization.

First of all, the issue of standardization. Namely product standardization and standardization internationalization. Like many traditional agricultural and sideline products in China, pepper products in Hunan Province have been extensively produced and processed, and operators even pay little attention to the trademarks and instructions on the packaging. For example, Chili sauce, as the most common Chili product in the market, often only shows Chili, but it is difficult for consumers to know which kind and how spicy it is. -Scoville method, a grading method of pepper spiciness, has been introduced internationally, that is, it is easy for people to judge which flavor of pepper product is suitable for them by how much capsaicin is contained in pepper; Standardized and standardized products are also easier to enter foreign markets. Secondly, we should constantly improve the technical content of pepper products. Dean Xia believes that it is difficult to improve the market share of pepper products in Hunan now, mainly because the technical content of pepper products such as hot sauce is not high, and it is easy to be imitated and counterfeit, which affects the industrialization process. Therefore, it is necessary to strengthen the research on the processing technology of pepper products, so that their products have distinctive characteristics and thus have brand appeal. It is understood that at present, many fermented pepper products in China are naturally fermented, which not only takes a long time, but also has unstable product quality. Hunan Agricultural University is conducting research on purebred fermentation, trying to apply the developed purebred to pepper processing to further ensure the quality of pepper products. Dean Xia told reporters that after completing the new Chili project, they will develop a Chili sauce product that is essentially equivalent to soy sauce, and the flavor, quality and efficacy of its effective active ingredients will be fundamentally improved.

Peng Fengxiang, general manager of Changsha Tantanxiang Seasoning Food Co., Ltd. believes that since most areas in Hunan are not suitable for planting and processing peppers, they are only suitable for planting fresh peppers. They can purchase processed peppers with good quality and reasonable price from other provinces without building a base in Hunan, and focus on new product research and development and expanding processing scale, and cultivate two or three large pepper processing enterprises through capital operation and brand building.
