Practice of rice cooker version of sweet wine brewing

1. Rice cookers, clothes, bowls and chopsticks are clean inside and out, so it's best to take a shower with boiling water to make them not stuffy or oily. Wash the glutinous rice and put it into the rice cooker. Add water. The amount of water added is less than the amount of rice cooked at ordinary times. For example, at ordinary times, the amount of water is the height of a finger joint. At this time, it needs to be reduced to the height of half a finger, which is about 1cm higher than the level of glutinous rice. The amount of water should not be too much, and the cooked glutinous rice should be dried thoroughly.

2. Cooked glutinous rice has obvious particles.

3. Remove with clean oil-free chopsticks and let it cool to near body temperature.

4. Dry a bowl of boiling water at the same time. When the water temperature is basically close to the body temperature, take a proper amount of distiller's yeast (according to the amount indicated on the packaging bag) and stir it evenly in the water. Pay attention to the water temperature must not be too high or too low.

5. Slowly pour the warm water mixed with distiller's yeast into the glutinous rice and stir it evenly by hand.

6. Put the prepared glutinous rice into a clean container (it is best to use ceramic or enamel products), dig a small hole in the middle with your fingers, mix some warm water with the distiller's yeast in the bowl, and fill it in the nest. If you like juicy finished products, you can add some warm water and mix well.

7. Cover it and wrap it in a plastic bag to prevent it from overflowing during fermentation.

8. Wrap the container with a stall or a thin quilt and put it under a strip for about 3 days in summer. Motivation can be placed next to heating in the north, but it should be avoided that the fermentation is too fast and the finished product tastes too sour during the period of too high temperature; In the south without heating, hot water bottles can be like a small amount of hot water, and the water temperature should not be too hot. You can lay it flat on the bottom of the container, wrap it in a blanket and put it in a warm place for about 3 to 4 days.

After 9.3-4 days, it has been completely fermented. Glutinous rice swells and tastes brittle. If it is still sticky like glutinous rice, it means that the fermentation time is not enough.

Sweet wine, also known as mash, wine niang, rice wine, etc. It is fermented from glutinous rice. Traditionally, glutinous rice should be soaked in advance, then steamed in a steamer, cooled and mixed with koji for fermentation. It was the same when I saw my mother when I was a child. Later, there was a rice cooker, and my mother said that making sweet wine with it was just like making white rice, which was convenient and easy to use.

Rice wine is a traditional snack in China, and families often make it themselves. The fermentation temperature of yellow rice wine is very important. In early spring, late autumn and winter, it is a good method to control the heating of rice cooker, which can greatly accelerate the fermentation process of yellow rice wine.

Matters needing attention

Steamed glutinous rice must be cooled to room temperature before it can be mixed with koji.
