How is rock sugar made?

Rock candy, also known as ice particles, is a large granular crystalline sugar made of sucrose and protein raw materials, which is made by redissolving, cleaning and recrystallization. There are single crystal and polycrystalline, transparent or translucent.

Natural rock candy has white, yellow and other colors. In addition, there are all kinds of colored rock candy (mainly used for export) added with food pigments, such as green and orange. Crystal sugar is pure in quality and not easy to deteriorate. Besides being eaten as candy, it can also be used as a high-grade food sweetener and pharmaceutical preparation.

Processing method of rock sugar:

1. Single crystal rock sugar: put white sugar into proper amount of water to be heated and dissolved, then put it into a crystallization tank to supersaturate the sugar solution, put it into a seed crystal for crystal growth, take it out for honey removal and centrifugal drying after the crystal grains grow up, ventilate and dry, sieve and classify, and then pack it out of the factory.

2. Polycrystalline rock sugar: put the white sugar into a proper amount of water to be heated and dissolved, boil the sugar, and input it into a crystallization basin after reaching a certain concentration. After the crystal grows in the crystallization chamber for one week, the completely controlled mother liquor is taken out, the sand bottom is removed, broken and dried, and packaged in different grades before leaving the factory.
