How to make handmade vermicelli at home

Prepare ingredients:

Sweet potato starch, clear water, alkaline noodles, minced garlic, chopped green onion, salt, monosodium glutamate, white sugar, soy sauce, aged vinegar, Chili oil, boiled water, coriander and fried peanuts.

Specific practices:

1. First, pour 100g pure sweet potato starch into a bowl, then add 200g water and stir until it melts. After stirring, directly pour the starch liquid into the pot to thicken, turn on a small fire and stir with chopsticks. With the increase of the temperature in the pot, the starch liquid in the pot will gradually solidify and thicken, and continue to stir with chopsticks in the same direction, which will become thicker and thicker.

2. Then pour into the basin, add a spoonful of alkaline flour, about 3g, and then add 500g sweet potato starch into the basin several times, and knead well with the beaten starch. When kneading dough, add 200 grams of water several times and knead them into a uniform dough.

3. Now that the dough is kneaded, grab a piece of dough and knead it for a long time, put it in the machine, take a pot of water, boil the water in the pot, press out the vermicelli, stir the pressed vermicelli with chopsticks to prevent it from sticking together, cover the pot and cook the vermicelli until it is transparent.

4. After the vermicelli is cooked, pour it into a cold water basin to cool. You can rinse with cold water several times, and the vermicelli will be stronger. Our sweet potato vermicelli is ready-made, without alum, very pure, without any additives, and very strong.

5. Next, simply make a hot and sour powder, add some minced garlic and chopped green onion to the bowl, add a spoonful of salt, a spoonful of monosodium glutamate and a spoonful of sugar, add a little soy sauce and a little mature vinegar, then add a few spoonfuls of Chili oil according to your own taste, add boiling water, add the cooked vermicelli, sprinkle some parsley and chopped green onion, and finally add some fried peanuts and stir well.
