1. Mix one catty of whole wheat flour with half a catty of medium gluten flour, add 5g of yeast (I melted it with warm water), and then add 400ml of pure milk (fresh) and appropriate amount of wheat bran.
2. Mix the above materials, knead the dough repeatedly until it is smooth and sticky, cover it with gauze, ferment for 1 ~ 2 hours (with heating at home), and send it without heating for 3 ~ 5 hours or longer.
3. Knead the fermented dough into small balls. I have no steps to vent here (it doesn't make much difference if I try)
4. Then boil the water in the steamer and serve steamed bread immediately. Sprinkle wheat germ on the surface of steamed bread and cover it. Generally 15 minutes is enough. Do not ferment at room temperature after serving, and do not use it for the second time. Fermentation is only needed once, and the water is boiled and steamed. It tastes better when it comes out, and it is tight inside without coarse holes. By the way, I'll give you a hint. It takes about 10 ~ 15 minutes to steam.
