What is the ancient white cake?
White cake is an ancient traditional snack, which is popular in Yangzhou, Jiangsu. Square cakes can be made of sesame, red bean paste, jujube paste and other raw materials. White is not a food, but a white square cake is made of many kinds of raw materials.
Square cake
The square cake is an authentic traditional local snacks with low price. The skin made of glutinous rice is sweet and glutinous when you take a bite, and the filling is just right, which is not sticky at all. Speaking of square cakes, it's not just a kind of cakes. The skin is glutinous rice, but there are many kinds of fillings inside, such as sesame seeds, bean paste, jujube paste, red beans and osmanthus.

working methods
1. Mix glutinous rice and japonica rice and grind them into powder, sieve them with a 32-mesh sieve, put them on a chopping board, sprinkle about 650g of water, mix well, and then sieve them with a 16-mesh sieve to make cake powder.
2. Make red beans, white sugar, soybean oil and salted osmanthus into heavy sugar wet bean paste 1500g.
3. Take a 33cm square steaming pad, spread a clean wet surface on it, then use a special concave-convex scraper to dig out 16 5cm square and 3cm deep concave pools on the cake surface, and put 18g wet bean paste into each one, then screen a thin layer of cake powder on it, scrape it flat, and press the mark specified on the picture frame horizontally and vertically.
Cut a 7.5cm square into 16 cake blank, then take a printing plate with negative lines, first spread the cake powder in the gutter and scrape it flat, then cover the printing plate on the cake surface, tap the bottom of the printing plate with a mallet to leave the cake powder pattern on the cake surface, and finally take off the printing plate and the movable frame to get the green cake.
4. Put the green cake blank, mold and steaming pad into a steamer, and steam on a big fire for about 10 minute.
